Black Bean & Radish Tacos with Avocado Crema
I was blown away by this recipe!! Who knew I would find meatless tacos SO good?! Very simple to make and so much more flavorful than I expected. This radish recipe involves simply heating a few ingredients on the stove in as little as 10 minutes while making your own dressing to go on top of the tacos.
I've always avoided making my own dressings, but now that I see just HOW easy it is, I WILL be doing it a lot more! I used my single serve blender since it isn't a high quantity. It took very little time and resulted in no mess.
Tacos (makes about 6):
1 tbsp olive oil
5 Scallions, sliced
6 to 8 Radishes, diced
1 cup Black Beans drained and rinsed
Corn Tortillas, for serving
1 Cup Cilantro, loosely packed
1/2 Lime, juiced (I used Lime Juice to taste)
1 Clove Garlic, minced (I used 2-3 teaspoons of minced garlic)
1/8 tsp Salt
1/4 Cup Olive Oil
The dressing can all just simply be blended together, using a bit more olive oil if needed to promote blending. I was fine as is. For the tacos, heat the scallions in a skillet with olive oil until they start to soften then add the radishes. Once the radishes soften and lose a bit of color, add the beans to warm them thoroughly.
Yes, that is literally it. Just scoop from the skillet into a warmed tortilla and squeeze some of the avocado crema on top. I also added cilantro leaves on top because its my favorite! You won't be disappointed.
Pro Tip: Easily spread cream/frosting consistency foods by stuffing into a small plastic baggy, cutting off a corner, and gently squeezing it out like a tube! I probably could have gone for a smaller cut so the dressing looked more pleasing!
